Working From Home And Time For Lasagna!
Lasagna! I’d sure like to meet the inventor of this delicious dish. This is one of my most favorite things to make. It’s definite comfort food in my family’s world. The gooey cheese, garlic-flavored ground beef, and tender noodles add to the top-notch flavor you taste when you add your sauce of choice. I have made a veggie lasagna before. I thought it was delicious. My dinner guest that evening (my father) did not think it was the best dish he’d ever tasted. He’s never let me live down the time I fed him “meatless lasagna”!
I’ve made several versions of lasagna, and none of them have disappointed me. How can you go wrong with all of the great ingredients you use? I have added pepperoni between the layers of noodles and it has become one of my favorite ways to make this dish. I’ve also added carrots, mushrooms, eggplant, zucchini, etc. I will warn you though. It is very difficult to limit yourself to only one piece. But, if you can, save some for the next day. The leftovers are even better! Can you believe that?
We had planned on having some friends over for dinner this evening. I knew I was going to make lasagna and with a busy day planned, I began prepping this morning. (Tip: I like to use lasagna noodles that don’t have to be boiled.) I was able to put this dish together and let the flavors mix before noon. The pan sat in the refrigerator all day. I popped it in the oven 30 minutes before dinner time, and it was perfect!

Hey, you! Yes, you! If you’re still reading this, I want to let you in on a little secret! School started today for the youth in our little town. I am testing out the life of a Stay At Home Mom and today was also our unofficial first day of home school. We got in all our lessons, prepped for dinner, cleaned the house, played, read books, told stories, AND had time to make some cookies. Two incomes down to one began today. How can we ‘make it work’? How can we afford for me to stay home with our littles?
